AJ Sankofa and his wife, Kristin Gambarian, needed a way to revitalize their fledging business. Then, out of the blue, they were notified via Instagram by the Food Network about The Great Food Truck Race competition. The couple, along with their friend Matt McFadden, were invited to audition and, after surviving several rounds, were accepted into the competition.

This was a great opportunity for ESO Artisanal Pasta, as they had never experienced working within the confines of a food truck. In addition, they were the first team to serve pasta on The Great Food Truck Race. After being flown to California and competing between February 2022 and April 2022, the team came in third place in the competition.

This success provided a big boost to ESO Artisanal Pasta. They now have a shop in Morristown, New Jersey that is open two days a week, on Fridays and Saturdays. In addition, they rent out a commercial kitchen at a restaurant 45 minutes away to make their products, and they also make money doing private parties.

The couple's appearance on The Great Food Truck Race has also helped their online business. Customers and fans of the show can order their home kit pasta, which sells in the $150 range, so they can serve an artisanal meal at home.
