Experience Creole culture and delicious cuisine in Lake Charles, LA.
Lake Charles is a Southern Louisiana culinary paradise, full of amazing cultural traditions and home to some of the most creative chefs in the world. With a history deep-rooted in African, French, and Spanish influences, the city is home to a number of Black-owned businesses and restaurants that celebrate and share the unique Creole heritage.

The Louisiana Food & Wine Festival was a great opportunity to see how these traditions come alive in the kitchen. We were lucky to witness world-class Louisiana seafood and gumbo dishes prepared by celebrity chefs like Tiffany Derry, Greg Gatlin, and Roy Angelle.

But what is the difference between Creole and Cajun cuisine? According to Visit Lake Charles’ website, Creole food is more elaborate to prepare and usually includes tomatoes. On the other hand, Cajun dishes are full-bodied or blackened and are made with whatever ingredients are available, like fish or game.

Tiffany Derry was one of the amazing chefs we got to experience. The Texas native is the founder of Tiffany Derry Concepts and co-founder of T2D Concepts. During the festival, she gave a master class on her famous Fried Shrimp & Grits, which included sharp cheddar cheese, tender shrimp, and other spices.

Edgar “Dook” Chase, IV was another highlight. The Le Cordon Bleu-trained chef served us Louisiana Blue Crab and Butternut Squash at the Celebrity Chef’s Dinner. He shared some of his family recipes, inspired by his grandmother Leah Chase, a James Beard award-winning chef. We also got to try his famous gumbo demonstration.

Finally, we were delighted to have Chef Amanda Cusey join us for the evening. She prepared Seared Louisiana Gulf Shrimp with Charred Corn and Pepperjack Grits and a Poblano Cream Sauce.

The Louisiana Food & Wine Festival was a great opportunity to experience the unique flavors of Creole and Cajun cuisine, and meet some of the culinary superstars who serve it up with Creole pride.
