Richard Bath recently visited Edinburgh's newest restaurant, which boasts a fusion of Pacific flavors. Cabo, located in the former home of Scottish rugby legend Simon Taylor's 99 Hanover bar, has only been open for a month and advertises itself as a unique blend of Asian and Latin American cuisine.

As I entered the restaurant, I was struck by the decor, which had more of a North African or Andalusian influence than the expected Pacific vibe. It was a refreshing change from the usual bustling and lively atmosphere of this popular spot.

The menu was divided into six sections, featuring a variety of options such as tacos, sushi, tartare, ceviche, mains, and salads/sides. My dining partner and I decided to start with the beef and mushroom tacos, which were decent but on the smaller side and lacked a bit of flavor, making us question the price. However, the true stars of the night were our main courses. The lamb cutlets and butter poached halibut were both perfectly cooked and came with tasty sides of new potatoes and broccoli. At £28 and £26 respectively, they were also reasonably priced for the quality and quantity of food.

Overall, Cabo was a delightful experience. The atmosphere was relaxed and the staff was friendly and attentive. The food, although a bit hit and miss, showcased unique and interesting flavors.
