Richard Bath recently visited Edinburgh's newest restaurant, which boasts a fusion of Pacific flavors. Cabo, located in the former home of Scottish rugby legend Simon Taylor's 99 Hanover bar, has only been open for a month and advertises itself as a unique blend of Asian and Latin American cuisine.

However, the true stars of the night were our main courses. The lamb cutlets and butter poached halibut were both perfectly cooked and came with tasty sides of new potatoes and broccoli. At £28 and £26 respectively, they were also reasonably priced for the quality and quantity of food.
Overall, Cabo was a delightful experience. The atmosphere was relaxed and the staff was friendly and attentive. The food, although a bit hit and miss, showcased unique and interesting flavors. I would definitely recommend giving this new restaurant a try.
